Jalapeño Cheese Filled Mini Sweet Peppers

We just love these little sweet bell peppers and today I decided to fill them with jalapeño cheese.



I blanched them quickly and then stuffed each one with cheese and then just put in a 350 degree oven until melted. 

We usually eat them plain because they are so good and so good for you, but I am just thinking of all kinds of things they can be stuffed with for a sidedish!
I scrunch up foil so they sit up in the little "pockets"
